Mixologists understandably embrace go-to liquors and liqueurs—think Fireball and RumChata—to bring new cocktails to the bar scene. But, what about old friends like gin, bourbon, vodka or campari, plus the squeeze-of-this, the dash-of-that, that made cocktails epic?
Vintage cocktails are back in a big way at Vickers in Exton, a cozy upscale restaurant with an approachable menu and Downton Abbey-style service. No need to hit Philly or New York when Vickers’ impeccably trained staff awaits to delight you with food and drink.
Sip on old standards done to perfection like the bourbon, bitters and fruit-infused old-fashioned or the cognac, Cointreau and lemon-kissed sidecar. But in the heat of summer, why not try something classic yet bright, like the Rose Collins? This riff on the Tom Collins is a magical mix of Aviation gin, fresh lemon juice, simple syrup, organic cold-pressed rosewater and a splash of club soda. It’s not too boozy, with a hint of vanilla, and comes neatly garnished with an orange slice and a maraschino cherry.
Equally refreshing is the Pama Ginger Martini, creatively crafted with Stoli vodka, pomegranate, ginger, fresh-squeezed orange juice and a candied ginger garnish. The pom is subtle and the ginger pleases with a sweet yet savory finish. Just as delicious: Seasonal signature cocktails are $3 off during happy hour.
You may find yourself at Vickers for fine dining, a business lunch, a special event or bar bites. But you’ll leave with a new appreciation for old-time cocktails done classically or with a twist. Stop by Monday–Friday from 11:30 a.m. to 2:30 p.m. for lunch; Monday–Thursday 5:30 to 10 p.m. for dinner; Friday and Saturday 5:30 to 11 p.m. for dinner; or 5:30 p.m. daily for cocktails. Closed Sunday.
