In honor of this weekend’s Días De Los Muertos festivities, Bryn Mawr chef Nick Farina of Verdad Restaurant & Tequila Bar and Union Taco has refined an exclusive dish to celebrate. Months in the making, Farina will debut his chocolate-chile fried chicken at all three of his restaurants on Friday, Oct. 31.
“Day of the Dead is all about remembering and celebrating loved ones who are no longer with us,” says Farina. “This dish has elements that remind me of several family members who made incredible contributions to my career path.”
The chef also shares that the spice-laden chicken combines his love for chocolate with his obsession for chili peppers. What makes it a must-try? He seasons, batters and deep fries organic Giannone chicken breasts and legs after slow cooking them in chile sauce for two hours at 150 degrees. Then, he drizzles the poultry with a guajillo pepper and chile sauce and finishes it with Mexican dark chocolate shavings. The end result? A sweet and spicy indulgence with a decadent crunch that’s tucked into house-made flour tortillas and topped with punchy smoked cabbage slaw.
But, Farina’s Day of the Dead festivities don’t stop there. He’s gone behind the bar to unveil a new cocktail, The Spirit Cleanser. Envision a cocktail built on a sage-infused blanco tequila base combined with St. Germain elderflower liqueur and lemon juice.
Eager to celebrate? The signature chicken and cocktail will be available at Verdad Restaurant & Tequila Bar, found at 818 W. Lancaster Avenue in Bryn Mawr, as well as both Union Taco locations (4229 Main Street in Manayunk and 712 W. Girard Avenue in Northern Liberties).
