If you have yet to experience pastry chef Fred Ortega’s formidable chocolate masterpieces at Conshohocken’s Tradestone Confections, you truly don’t know what you’ve been missing. The former Le Bec-Fin superstar teamed up with Chip Roman, renowned in his own right as the owner/executive chef at Blackfish, Mica, The Treemont and Tradestone Cafe, to open the confectionery early last year. Since then, it’s been sweet times for the shop, which whips up a delightful assortment of truffles, bars, caramels, bark, turtles, pâte de fruit and seasonal selections.
You won’t find cocktails at Tradestone Confections, so you’ll have to mix up Chef Fred’s latest creation in the comfort of your own home. We guarantee this recipe will help take some of the chill off this winter. For the best result, be sure to pay a visit to the shop for the key ingredient— an artisan 72 percent cacao bar sourced from Venezuelan beans. And if you happen to add a box (or two) of truffles to your basket by the time you leave, well, that’s all the better.
