Win Signature Restaurants is known for its eclectic Asian-inspired restaurants Azie in Media, Azie on Main and Teikoku. But what you may not know is that the three restaurants have employed some of the most talented sushi chefs in the Philadelphia region.
These four sushi chefs—Akihiko Takeshima (Azie in Media), Koichi Aoyama (Teikoku), Toyoji Yamada (Azie on Main) and Toshio Hosaka (Teikoku)—have worked for some of Philadelphia’s premiere restaurants—including Morimoto, Pod and the original Genji—where they all met in the 1980s. They went on to contribute their talents to the growing popularity of sushi and Japanese cuisine in Philadelphia and the suburbs.
On Sunday, March 26, at 6 p.m., the seasoned chefs will reunite at Teikoku for a celebratory four-course, sushi-themed dinner to bid farewell to executive sushi chef Toshio Hosaka, who will retire at the end of the month.

First Course
Daikon Radish Wrapped Lobster

Second Course
Teikoku Signature Japanese “TFC” Fried Chicken Tempura battered in soy, mirin and sake
Third Course
Chef’s Choice Sushi Platter
Seven pieces of nigiri, one piece of each: kanpachi, hamachi, tai, sake, ebi, cho-toro, maguro​ and a spicy tuna roll
Fourth Course
Mochi Ice Cream
Green tea, strawberry, mango

For those who can’t make the celebration, visit any of the three restaurants during March to get a taste of chef Hosaka’s signature sushi dish, daikon radish wrapped lobster with plum sesame vinaigrette and seaweed salad.
