Three years ago, in an area with a surplus of pizza options, Speer Madanat’s Pizza West Chester became an unqualified hit on word of mouth alone. Our critics’ pick for Best Under-the-Radar Restaurateur, Madanat has been in the business for 28 years. From 2007 to 2022, he co-owned Joey’s Pizza in Thorndale with his brother, Joseph.
But Madanat’s approach in West Chester has been different—minimal signage, no website and limited hours posted only on social media. Minus a typical business model, the Coatesville native has embraced his customers, who can’t get enough of whatever he makes. It’s nothing less than a grassroots phenomenon—one that’s carried over to Steaks West Chester and a new Italian custard spot called (you guessed it) Ice Cream West Chester.
What’s Madanat’s secret? We asked him.
MLT: How long have you been in the food business?
SM: Since I was 17 years old. A typical high school job eventually turned into a passion. I opened my first pizza shop in 2005.
MLT: Who’s inspired you?
SM: Marc Vetri, Danny [Giampietro] from Angelo’s Pizzeria [in South Philadelphia], Joe Beddia [Pizzeria Beddia in Fishtown], Lucali [in Brooklyn, New York], and all the spots I visited in New Haven, Connecticut.
MLT: Why do you think you’ve had so much success in West Chester?
SM: We’ve created a destination spot—and the town deserved one.
MLT: So what is it about the food?
SM: Prioritizing quality ingredients and flavors with a small menu is something that truly stands out. My commitment to quality and customer satisfaction is what keeps people coming back.
MLT: First pizza, then cheesesteaks, and now ice cream. What’s next?
SM: I’ve always wanted to open a bar.
