Restaurateur/mini-empire builder Chip Roman has teamed up with Fred Ortega to launch new Tradestone Confections, an artistic, artisanal candy operation based next door to Blackfish on Fayette Street in Conshohocken. Specialties include sea salt caramels, espresso truffles, almond bark and macaroons.

Green Eating

MOM’s Organic Market, an eco-savvy, Washington, D.C.-based grocery chain, has chosen Rosemont Square for its first Pennsylvania location. Look for a spring 2014 opening.

Fresh Concept

Jose GarcesIron Chef Jose Garces debuts his newest Philadelphia eatery this month. Rosa Blanco is a Cuban diner styled as a Miami throwback. Occupying the Chestnut Street shell of his now-defunct Chifa, it will feature a rotisserie- and sandwich-heavy menu, a fully stocked rum bar, and a takeout counter. Garces is also prepping for Volver at the Kimmel Center for the Performing Arts, which will only open when the acclaimed chef is cooking.
