Executive chef David Murray believes Esposito’s Meats packs the “most impressive, highest quality” inventory, which is why he depends on the 102-year-old Philadelphia-based purveyor for all of his prime-beef products. Accoutrements include house-made red wine demi-glace, titled G1 sauce, and seasonal herb compound butter. “We don’t need to mask the filet mignon with any seasoning—it’s a beautiful piece of meat,” says Murray. “We just enhance it with a little salt and pepper. It’s so tender you could use a butter knife.” $48.
