Hot Plates Awards 2013: Twenty-Day, Wet-Aged USDA Prime Filet Mignon, Peppercorn (Formerly Georges')

Twenty-Day, Wet-Aged USDA Prime Filet Mignon from Peppercorn (Formerly Georges’) in Wayne.

Executive chef David Murray believes Esposito’s Meats packs the “most impressive, highest quality” inventory, which is why he depends on the 102-year-old Philadelphia-based purveyor for all of his prime-beef products. Accoutrements include house-made red wine demi-glace, titled G1 sauce, and seasonal herb compound butter. “We don’t need to mask the filet mignon with any seasoning—it’s a beautiful piece of meat,” says Murray. “We just enhance it with a little salt and pepper. It’s so tender you could use a butter knife.” $48.
