Hot Plates Awards 2013: Tuna Tartare, Sovana Bistro


This hot-selling app is the reason chef/owner Nick Farrell had to create a “staples” section on his seasonal menu. The dish is simple but memorable, the tuna perched atop a bed of crushed avocado and lightly dressed with a refreshing lime-ginger vinaigrette. With its accompanying house-made sea-salt-rosemary potato chips, the app is so popular that some guests request a larger portion as an entrée. “My wife is a picky eater, and she orders this dish once a week,” says Farrell. “If she’s happy with it, I know it works.” $15.
