Each season, this entrée gets a slight tweak, but its four succulent scallops are always from Barnegat Light, N.J. For summer, it’s served with puff rice, pan-seared diced zucchini and a silky sunchoke puree. The addicting brown-butter vinaigrette was inspired by a classic meunière sauce. $34.
