EatNic to Open in Paoli

The new concept comes from two well-established local chefs.

EatNic Urban Farmhouse & Eatery, an all-scratch kitchen serving new American fare, international classics and local family recipes, will be opening soon in Paoli.

Owned by John Scardapane, a 30-year restaurant veteran and the former chairman and CEO of Saladworks, the restaurant is taking over the spot of one of his former Saladworks.

Tim Courtney, who most recently served as the executive chef at the Silverspoon in Wayne, will pick up the same position at EatNic. Courtney was raised in Chester County and educated at the Culinary Institute of America.

Joining Courtney in the kitchen is executive sous chef Seth Arnold, who has a culinary history in upscale gastropubs and local country club kitchens. Former stints include the Silverspoon, Whitford Country Club, Liberty Union, Two Stones Pub Kennett, Station Tap Room and most recently, Amani’s BYOB.
