Chester Springs’ Yellow Springs Farm is encouraging us to “think spring” with the launch of its upcoming calendar events.
Thanks to the local farm’s owners and operators, Al and Catherine Renzi, a duo celebrated for their site-made artisanal goat cheese and impressive inventory of native plants, we now have four solid remedies for combating our winter blues.
Remedy One: Cheesemaking Workshops
Starting in April, the Renzis will offer cheesemaking courses for aspiring cheese fanatics. Students will become educated on the entire process of goat cheesemaking, beginning with the activity of milking the goat to the final stage—enjoying the cheese! Attendees will learn all steps of how to create cheese on their own, from cooking and molding curds, salting cheese, cleaning and turning cheeses in the cave, and more. Cost is $95, which includes education, one pound of cheese to take home, and a cheesemaking recipe. Class runs 11 a.m.–3 p.m. Courses will unfold: April 6, May 25, June 8, Sept. 21, Oct. 12.
Remedy Two: Cheese CSA
Are you a dedicated Yellow Springs enthusiast? If so, continue to support the farm by signing up for their annual CSA! From May through September, members of the farm’s share will be the first to try new and exciting cheeses every two weeks. In 2013, members were able to experience 13 new varieties, and 2014 promises to be just as exciting! Cost for a full share is $300.
Want to test-drive the cheese CSA? You can do that! Sign up for Yellow Springs’ abbreviated CSA where you’ll receive your cheese share from May–June for just $100. This package features four pickups with three cheese portions (12 oz. of cheese per pickup).
Remedy Three: Farm Days
There’s no better way to enjoy the spring season than on the farm! Start saving the following dates for the Renzis’ open farm days: May 3-4, 10-11, and 17–18, from 10 a.m.–4 p.m. Open farm days are free and packed with family fun, including the opportunities to explore great plant selection, score garden advice, encounter cheese, caramel and yogurt tastings, and enjoy goat photo opps.
Remedy Four: Stock Up at Farmers Markets
We get it—spring is months away. Buy time until the warm-weathered season begins by catching the cheesemakers at West Chester Growers Market. They’re on-site select Saturdays for the winter market, including Sat., Feb. 15, 10 a.m.–noon.
