Citron and Rose's Cosmonaut and Oyster Tartare from Doc Magrogan's Oyster House

A little salty, a little sweet and utterly addicting, both treats are delights by themselves and even better together.

THE SIP: You’ll fall in love with the Cosmonaut, Citron and Rose’s garden-in-a-glass. This kosher-certified bar spikes a rich pool of beet syrup with SKYY vodka and pomegranate juice for one earthy-sweet, sustainably calibrated delight. $10.  370 Montgomery Ave., Merion Station; (610) 664-4919, citronandrose.com.

THE BITE: For its oyster tartare, Doc Magrogan’s Oyster House tops mildly sweet Chesapeake crustaceans with cubes of fleshy yellowfin tuna, sprinkles on sesame seeds, and adds a bracing dollop of wasabi. $10 for three; offered through February. 117 E. Gay St., West Chester, (610) 429-4046; 3432 Sansom St., Philadelphia, (215) 382-3474; docmagrogans.com.
