Now there’s one more reason fans of Bluebird Distillery should head over to Phoenixville’s Craft Cocktail Tasting Room: Founder Jared Adkins has just released his newest spirit, Phoenixville Straight Whiskey, an 86-proof blend of Bluebird’s Four Grain Bourbon, Rye Whiskey and Wheat Whiskey. The sip is a liquid homage to victuals of the pre-Prohibition era and to the borough’s steel mill workers who drank them.
“I’ve been wanting to do this for a long time, a play on American whiskies,” says Adkins. The first batch is a limited release of 500 bottles, sold exclusively at Bluebird’s Phoenixville Distillery and Tasting Room for $40 each. His goal was to make a more approachable libation by offering a lower proof—most of his other whiskies average 92-proof—combined with a lower price point. While it’s softer on the palate, it still stands up to the flavor combinations of the tasting room’s cocktail concoctions.
The new whiskey isn’t the only big changes for Bluebird—Adkins recently opened a second tasting room at the Shops at Liberty Place in Philadelphia, and is about to unveil a new craft cocktail bar and bottle shop within The Bourse, also in Philadelphia.
