Local chocolate sommelier Estelle Tracy has gained a reputation for her knowledge of the cacao-derived favorite, which she imparts at area classes throughout the year. Pivoting for the pandemic, Tracy, who grew up in France but has lived in Kennett Square for years, is taking her classes online, with a focus on Colombia. The virtual classes, held over Zoom, will take place May 31 and June 7.
For the past several years Tracy, through her 37 Chocolates, has sought to educate individuals about different chocolates, including its origin and flavor profile, while also dispelling misconceptions. “Once you actually start exploring the world of fine chocolate, it’s really just like coffee,” she explains.
In her upcoming classes—which were inspired by a trip she took last year—Tracy will explore the many varieties of Colombian cacao. Limited to 12 spots each, participants will receive by mail three chocolate bars from Castronovo Chocolate, whose nuanced flavors and origins they’ll uncover in a two-hour tasting.
Tickets are $50 each.
