Amis Trattoria’s Bolognese Recipe Makes Pasta Night Better

The spectacular sauce recipe transforms go-to noodles into unforgettable dishes that are even more incredible with a sprinkle of parmesan.

With roots tracing back to the Italian city of Bologna, Bolognese is a hearty and popular dish, especially in the U.S. Locally, Amis Trattoria in Devon has put its own spin on it, layering in authentic flavors thanks to fresh herbs and other ingredients. Great for dinner, here’s how you can make this crowd-pleaser at home.

Ingredients

  • 13 grams olive oil
  • 1 pound ground beef, veal and pork (alternately, you can use just beef or beef and pork)
  • 50 grams diced celery
  • 50 grams diced carrots
  • 50 grams diced Spanish onions
  • 8 grams peeled, chopped garlic
  • .25 cups red wine
  • 6-8 fresh rosemary leaves, cleaned and finely chopped
  • 4-6 fresh sage leaves, cleaned and finely chopped
  • 1 dry bay leaf
  • 2 ounces grated parmesan
  • 1 cup whole milk
  • .75 cups canned crushed tomatoes

Procedure

  • Use 1 tablespoon of olive oil to coat the bottom of a large rondeau. Heat until just before smoking point, then add meat and brown. Using a potato masher or firm whisk, break up the meat so there are no large pieces.
  • Add carrots, celery and onions, sautéing for 10-15 minutes, until vegetables are tender and the onions are translucent. Be sure to stir frequently.
  • Deglaze pan with the red wine, then reduce to glace.
  • Add rosemary, sage, bay leaf, grated parmesan, milk and tomatoes. Bring to a boil, then reduce to simmer. Simmer until the liquid has reduced by about a third.
  • Season with salt and pepper to taste.
  • Serve the Bolognese over your favorite pasta like tagliatelle or pappardelle.
