Chef Michael Giampa of Wayne’s Paramour is conscientious about where the food on his menu comes from. He draws on local, organic sources whenever possible, and even the restaurant’s beer list is purely American. On Jan. 24, Giampa will host a Farmer’s & Brewer’s Dinner, centered around grass-fed Scottish Highland steer from Why Not Farm, located just 30 minutes away.
Each of the seven courses will be paired with a craft brew from New York’s Sixpoint Craft Ales. The farmer and the brewer will both attend, answering diners’ questions and explaining the courses. Look forward to beef tartare with a quail egg and local honey, paired with a slightly sweet and “grassy” Pilsner; Philly cheesesteak sliders, with a small-batch IPA; and a rib-eye-and-sirloin duo, with a chocolaty American Stout.
