Summer is upon us, which means days spent poolside, trips “down the shore,” barbecues and boardwalk pizza. Marigold Kitchen is embracing the season with a summer menu from executive chef Keith Krajewski and co-chef/owners Andrew Kochan and Tim Lanza.
For those seeking a seasonally inspired dining experience, Marigold Kitchen’s new menu is full of summer treats. Enjoy fresh takes on favorite dishes and new creations, which are sure to evoke a few childhood memories. Feast your eyes on new dishes from boardwalk pizza to Jersey corn to barbecue chicken to sweet treats like a s’mores milkshake.
“I’m really excited for people to try this menu and to see their reactions to what is ultimately a very different menu format for us at Marigold Kitchen,” explains Kochan. “The goal with this menu is to relax and fall into the comforts of the summer. We normally don’t create menus with a uniform theme, but for this season, we thought it appropriate to put the focus on summertime nostalgia and to pay homage to the classics that we have had since childhood.”
The ever-evolving 11-course tasting menus at Marigold Kitchen transform with each season, and chefs handcrafts each dish from scratch. Seasonal ingredients fuel the dishes, so the freshest fare is always featured. Check out some highlights from the summer tasting menu:
S’mores Milkshake
A good summer night ends with a s’more, and dinner at Marigold Kitchen is no exception. This milkshake of caramelized dark chocolate is topped with a toasted housemade vanilla marshmallow and graham cracker swizzle.
Cold Pizza
This dish mimics the boardwalk pizza slice by combining slow-roasted campari tomato concassé, gooey mozzarella, micro basil and charred semolina flatbread.
Arugula Salad
A salad in an unconventional form, this panna cotta of sautéed arugula and garlic is served with candied pine nuts, crispy mustard greens and a preserved lemon vinaigrette.
Summer Corn
This lime-scented fritter of sweet Jersey corn is served with a spicy harissa sauce that is cooled with the accompanying sour cream gelée and pickled scallions.
Barbecue Chicken
Expect fireworks as you dig into chicken thighs that are first slow-cooked, then wrapped in crispy chicken skin and dipped in a cola barbecue sauce alongside braised celery, crispy confit potatoes and a 143-degree egg that become the accompanying potato salad to complete a backyard barbecue.
The summer tasting dinner is $90 per person plus tax and gratuity. Marigold Kitchen serves dinner Tuesday through Saturday beginning at 6 p.m.
