After serving egg rolls at Main Line events and farmers markets, Madi’s on a Roll celebrates the opening of its first storefront in Exton.

Homemade specialty egg rolls from Madi’s on a Roll are a must at any Main Line event and, if you’ve tried them, you can easily understand why. With imaginative flavors like bangin’ shrimp, bacon cheeseburger, jalapeno popper and French toast, owner Madi McShane has made a name for herself throughout the Philadelphia suburbs. Now, her delicious egg rolls can be found at their first brick-and-mortar home in Exton beginning April 6.

“My proudest moment of all was getting the keys to our storefront,” McShane says. “It felt like the ultimate goal achieved.”

Thanks to entrepreneurial parents, McShane knew that the corporate world wasn’t for her. She also knew that she loved egg rolls, citing her mom’s homemade cheesesteak variety as her favorite food growing up. A West Chester University graduate, she left her job in 2018 to focus on the creation of the Madi’s on a Roll brand. “I wanted to start a food truck, but didn’t have the money. So I bootstrapped it and sold our egg rolls from a tent at different festivals and breweries,” she describes. “I had zero plan, zero idea what I was doing and zero help. Looking back, I’m not quite sure how I did it. I was 23, and I must have been way stronger and motivated than I give myself credit for!”

After five years in business, Madi’s on a Roll has come a long way from its humble beginnings. McShane met Brian Coble in their shared kitchen space, and they later married in 2022. They’ve since brought on a fulltime operations manager and have a team of over seven helpers. The crew will grow by two tiny feet in June when the couple welcome their first child.

You can find the egg rolls at over 10 farmers markets in the area as well as online, and customers are now able to stop into the Exton location at 290 E Lincoln Highway to pick up the prepackaged goods. “We are selling frozen prepackaged egg rolls, homemade sauces, egg roll chips and more. Expect to see egg roll-making classes, egg roll tastings and other events in the near future!” McShane reveals.

As for her personal favorite flavors, it’s hard to choose. “My tried and true is our buffalo chicken,” she says. “However…bangin’ shrimp has been my go-to for the last year. It’s made with cabbage, carrot, green onion, shrimp and a homemade spicy mayo. I could eat 100 of them!”

We can certainly relate to that sentiment.
