While green-tinted drinks may be notorious around St. Patrick’s Day, it’s National Absinthe Day on Tues., March 5 that makes it suitable for you to sip grass-hued beverages and treat yourself to the fabled “green fairy.”

Philadelphia’s Rex 1516’s general manager and mixologist Heather Rodkey is an expert on the local craft cocktail scene, nightly presenting the historic, naturally green elixir the authentic way (with a dissolved sugar cube over a slotted spoon and chilled water) for willing bar guests. In her opinion, she finds that the more herbal the spirit—like gin or absinthe—the more “dreamy the buzz.”

But, like any modern day mixologist, she’s also reinventing the whimsical anise-flavored spirit into a libation of her own. Since she suggests, “the personal effects of absinthe are something one must try at least once in a lifetime,” we encourage you in honor of tomorrow’s holiday to belly up at the South Street haunt and sample her new Pan’s Elemental cocktail. It’s an original blend of Vieux Carré Absinthe Supérieure swirled with Rhum Barbancourt, Cardamaro and fresh lime juice.
