Philadelphia-area native Nicole Marquis first launched HipCityVeg in 2012 in Rittenhouse. Since then, the restaurant concept has opened four other locations, with three in Philadelphia and one in Washington, D.C. Marquis also created two other vegan restaurants in Philadelphia—cocktail bar Charlie was a sinner and Latin-inspired Bar Bombón.
