Gypsy Saloon Welcomes a New Chef

Anticipate authentic Italian dishes from chef Simone Calonaci.

Step out of West Conshohocken and into the Tuscan countryside with one bite of linguine with three tomatoes sauce, courtesy of Gypsy Saloon’s new chef, Simone Calonaci, who hails from Florence, Italy. Conshy Girls Restaurant Group owners Kim Strengari, Marianne Gere and Michael Golden welcome Calonaci and his 20 years of creating Tuscan cuisine to the team, where he’ll be mixing things up.

Here’s a sampling of the authentic and seasonal Italian dishes you can anticipate on the new menu:

  • Seasonal soufflé of vegetables with three-cheese sauce and topped with bacon.
  • Crespelle: spinach ricotta crêpes in a red sauce, bechamel sauce and Parmesan.
  • Linguini with three tomato sauce: sun-dried, cherry and plum tomatoes.
  • Homemade Italian ragu: fettuccine with veal ragu.
  • Grilled octopus served over cauliflower cream mash, radicchio and marinated mussels.
