Georges’ monthly wine dinner series has been a perfect way to cut through the humdrum of this winter’s cold nights. Thankfully, another one is on tap for Feb. 25. This time, Georges has welcomed vineyards from Oregon to select the pairings for the four-course meal.
It all starts with a scallop ceviche amuse-bouche, paired with A to Z Pinot Gris, and moves on to a pan-seared dorado with baby bok choy, basmati rice and a sweet-and-sour coriander sauce. Dorado is the perfect fish to be paired with the Willamette Valley chardonnay. For the second course, diners get a roast squab breast with cinnamon and morel couscous, complemented by pinot noir. The entrée is a hearty braised short rib with celery root puree and roasted baby carrots, also well matched with a nice pinot noir. Delicious chocolate macaroons and a sweet Riesling round out the meal.
