Cuba Libre is doing something pretty incredible this New Year. After taking three trips last year to Cuba, where he was inspired by the culture, cuisine and people, Chef Guillermo Pernot will hold a series of “Pop-Up Paladares,” collaborative meals prepared by him and visiting Cuban chefs. Beginning Jan. 11-13, Pernot will host Chef Luis Alberto Alfonso Perez, owner of four Cuban paladares (private restaurants in a chef’s home). The duo will cook a fantastic four-course meal, with seatings at 6 p.m. and 8:30 p.m. His first of many pop-up paladares is sure to be popular, and seating is limited.
