Malvern’s Stove and Tap Will Become a Modern Steakhouse

Malvern’s Stove and Tap is being reimagined to become Joey Chops, an elevated yet approachable steakhouse made for Main Line foodies.

With success in West Chester and Lansdale, Stove and Tap came to Malvern right before the start of the pandemic. Now, the space is being reimagined by Stove and Co. Restaurant Group’s Justin Weathers and Joe Monnich to become Joey Chops, a modern American steakhouse with premium seafood and an amazing lineup of libations.

“We started to feel like the area was saturated with casual concepts, with too many burger and wing options,” says Weathers. “There’s a lot of places to eat in the area, but what people are looking for is a place to dine, celebrate and enjoy great food. There’s a hole in the market for that.”

Classified as a boutique steakhouse, Joey Chops will be all about great vibes and fun energy. The interior will be comprised of lots of woods, industrial lighting, reclaimed aluminum and other handpicked pieces to create a higher-end setting that is still comfortable and on-trend.

“It’s boutique in the sense that it’s just a little more intimate and smaller,” Monnich says of the eatery, which will seat around 70 guests.

Weathers and Monnich are focused on creating an experience that is elevated yet still approachable, appealing to everyone from the everyday diner to the local connoisseur. “We’ll have really nice bone-in, dry-aged cuts for guests, but then we’ll also have a butcher’s cut, which is going to be more approachable for someone who doesn’t want to spend over $60 on a steak,” Monnich tells.

The menu will be divided up into categories, with starters, a raw bar, soups and salads, hand-cut steaks, entrees and skillet sides. Dishes to look out for include wagyu sliders, tableside tuna tartare, a house-made bacon steak wedge salad, salmon Wellington and more.

The bar is also undergoing a renovation to hold a large, upscale liquor selection. Expect a large wine by the glass and bottle program as well as a partnership with Levante Brewing. Specialty cocktails are also expected to be a hit. “A lot of freshness and imagination are going into the program,” says Weathers.

General manager George Simaan taps into his prior experience with the Sullivan’s Steakhouse Group to assist in bringing the vision of “polished service that isn’t stuffy” to life. “Rock and roll is still going to be playing,” says Monnich.
