An Autumnal Culinary Celebration Hits Heirloom Featuring a Judy Wicks Collaboration

Chef Al Paris welcomes locavore extraordinaire Judy Wicks into his kitchen for a one-night-only collaborative meal.

Chestnut Hill’s chef Al Paris continues his collaborative dinner series at Heirloom by inviting the notable Philadelphia restaurateur and activist Judy Wicks into his kitchen for a four-course celebration of autumnal flavors.

Wicks, a pioneer of local-sourced and humanely raised food, is best known for opening White Dog Cafe in University City in 1983. Paris identifies the one-night-only menu as inspired by the mover-and-shaker’s philosophies and values.

Teases of the upcoming, farm-forward tasting include: a Green Meadow Farm salad crafted with butternut squash confit and cranberry vinaigrette, an Alpine char and poached American oysters combo with Oregon sturgeon caviar, a chestnut-thyme smoked Jersey squab with rutabagas, and a Pennsylvania stone fruit dessert served with apple verbena glaze, Dougie Newbold Nubian goat cheese cream and burnt local honey.

This dinner featuring Wicks will be the third collaborative dinner of Heirloom’s chef series, with chefs Georges Perrier, Aliza Green and Josh Lawler previously taking part in dinners past.
