Chef Clark Gilbert Guest Spots at Green Bean Cafe

Sample his dishes at the Gladwyne cafe on weeknights.

Those on the hunt for seasoned chef Clark Gilbert following the shuttering of Manayunk’s Bisou are in luck. Photo by Steve LegatoThe chef, most notably of his former bistro in Narberth, Gemelli, has announced that he’s collaborating with Gladwyne’s Green Bean Coffee for a dinner party-esque series.

Weekly, from Tuesday through Friday, Gilbert collaborates with Green Bean’s Tammin Kim to prepare a nine-course tasting at her charming breakfast-and-lunch cafe. The interactive tasting, limited to twenty diners each night, will be modified every few weeks and crafted to spotlight local, in-season ingredients.

The first tasting menu, which kicked off June 25 and continues this week, kick-starts with a poached shrimp and avocado gazpacho, followed by intriguing, flavor-packed preparations of Spanish rock octopus served Nicoise-style, yellowfin tuna with crispy sweetbreads, white striped bass with razor clams and white bean puree, braised veal cheeks with English pea risotto, and so much more. Devour the debut menu here.
