Patrick Feury of Nectar in Berwyn is doing his part to help the environment by making his business the most sustainable it can be. He’s in the process of installing 238 solar panels, which will produce enough energy to run the entire restaurant. No, the solar panel system isn’t a cheap undertaking—we’re talking $300,000—but the government will subsidize 30 percent of the project and Feury expects the investment to pay for itself in roughly seven years. Installation is expected to be complete in June.
Feury and his business partner, Henry Chu, are also becoming green thumbs. The pair is building a restaurant garden, complete with fresh herbs and veggies like Thai chili peppers and heirloom tomatoes to be used in Feury’s dishes. And what about all the food scraps from the restaurant? Feury has taken up composting to minimize waste, feed his garden, and help the Earth.
