Swarthmore’s heavy-hitting duo, David and Jack Cunicelli of 320 Market Cafe, are spinning a little March madness into their food and beer pairings. This time, they are throwing all-natural, house-cured and smoked, thick-cut bacon in the spotlight for one mighty four-course tasting.
From now through April, swing by the artisan market and cafe to entice your taste buds with the Cunicellis’ brand-new “When Pigs Fly” beer and bacon flight.

If you do, the porky session will unravel like this:
First course: You’ll start with Stillwater Classique (saison) as paired with balsamic reduction-drizzled bacon. The brothers reveal that this coupling takes you back to the pasture, where farmers historically ended their work day with a refreshing farmhouse ale.
Second course: Get a little boozy with Allagash Tripel (arrives at 9% ABV), combined with blood orange-enhanced bacon. Word on the tasting panel is that the bright tanginess of blood orange holds its own against savory bacon while the honey notes of a Belgian-style Tripel tie everything together.
Third course: The fierce Bell’s Two Hearted Ale makes an appearance in this flight, married with creamy gorgonzola-crowned strips of bacon. The richness of the cheese and bacon counteracts the subtle sweetness and slight bitterness of the ale.
Fourth course: Take your palate on a decadent getaway with the pairing of Founder’s Breakfast Stout and dark chocolate-coated bacon. The roasty stout acts as the perfect complementary partner to the smooth denseness of the chocolate.
