Lemon Creme (Lemon Macaron Filling)
95g fresh lemon juice
grated lemon zest of 3 lemons
180g unsalted butter at room temp.
Instructions: Over a pot of simmering water, place a bowl of all ingredients, and whisk until thickened and light (about 7 minutes). This also makes a beautiful filling for a cake, or tart. Use Meyer Lemons when you can find them for a special sweet-tart balance!
